Keto Hot Mocha

Ingredients:

3/4 cup unsweetened almond milk
1/2 cup water
1/4 cup (or less) heavy whipping cream, chilled!
1/2 teaspoon organic keto cocoa powder
3/4 teaspoon instant coffee powder
optional spices:  cinnamon, nutmeg (NOTE 1)


Instructions:

Start making the whipped cream first. 
I use a 1-cup glass pyrex measuring cup, pre-chilled in the refrigerator,
and an Aerolatte battery-powered "milk frother".
Use 1/4 cup (or less) pre-chilled whipping cream in a chilled glass container
Mix until stiff - this takes some time.
The secret to getting a good whip is small batch and pre-chilling.


In a small pot, heat the almond milk and water
Add in the cocoa powder and mix until smooth.
Do not boil.  Heat until just simmering.
Put the instant coffee powder into a cup and add the hot almond milk, water, cocoa mix.
Stir the drink
Spoon some whipped cream on top of the drink
Remaining whipped cream can be put into the refrigerator and saved for next drink


Serving Information:

Yields 1.5 cups unsweetened keto mocha, 1 serving.


Notes:

NOTE 1:  The optional spices can be added at any point along the way.  They can be mixed into the whipped cream; put into the heating liquid; added to the cup before or after pouring in the hot liquid, or sprinkled on top of the added whipped cream.
